Chocolatier becomes Alain Ducasse

IMG_0398Michelin star chef Alain Ducasse not content with his Michelin stars had another life long career wish that he had not fulfilled and now he has achieved it.

And not just a brand, they are making chocolate from the beginning – roasting and crushing the cacao bean, preparation that is usually performed before most chocolatiers receive their chocolate supplies to take to the tempering stage. The trend for quality chocolatiers in France and Belgium now is to produce single origin chocolate and Ducasse has launched straight into that trend.

It is in a former factory near Bastille in Paris.

IMG_0401When all the Parisian chocolatiers compete to make sure they have the most beautiful packaging and boutiques to sell their wares, he has gone for simplicity.

Ours was a hurried visit on the last morning of our stay in Paris, we had no time to organise a special behind the scenes tour for this blog but on his website there is a short movie showing all the behind the scenes view of the workshop. Β La Manufacture de chocolate –

      Well we tasted plenty of samples in the showroom but did not buy to take away we already had 2 kg of chocolate in out bag and we still had weeks to go so we left some in storage in London but still bought more in Belgium, total of around 3-4 kg of chocolate, some consumed there and the rest in my computer bag. Too heavy but they get ruined if they go into the plane’s hold as it is freezing in there.

    That looks wonderful! I’ve dined at his restaurant in London and it was superb from beginning to end πŸ˜€ I bet the chocolate is fantastic-he is such a perfectionist πŸ™‚
